Main Ingredients- 3 fresh eggs
- 40g chives
- 1 mini sweet bell pepper (orange)
- A little olive oil
- 1 Tbsp oyster sauce
- 1/4 tsp salt

- 1.5 Tbsp cooking wine (mirin)
- 2 pinches salt

Cooking Instructions
Step 1
Before you begin, prepare all your fresh ingredients. Wash the vegetables and pat them dry. Crack the eggs into a bowl.
Step 2
Chop the sweet mini bell pepper and chives into bite-sized pieces, about 3cm long. Cutting the chives to a manageable length will make stir-frying easier.
Step 3
Crack the 3 eggs into a bowl. Remove the chalazae (the stringy white bits) with a chopstick. Then, add 2 Tbsp of milk for tenderness, 1.5 Tbsp of cooking wine to remove any eggy smell, and 2 pinches of salt for seasoning. Whisk everything together with a chopstick until well combined. Try not to create too much foam.
Step 4
Heat a non-stick pan over medium heat and add a little olive oil. Pour in the beaten egg mixture. As the edges begin to set, gently stir with chopsticks to create soft scrambled eggs. Cook until the eggs are just set and still slightly moist; avoid overcooking, as they can become dry.
Step 5
Add the chopped chives and mini bell pepper to the pan. Stir in 1 Tbsp of oyster sauce for a rich umami flavor and 1/4 tsp of salt to enhance the overall taste.

Increase the heat to medium-high and stir-fry for about 5 seconds. The key is to mix everything quickly to combine the flavors without overcooking the chives. You want them to retain a slight crispness.
