- Rice water (for removing fishy smell)
- Parchment paper
Sauce- 5 Tbsp soy sauce
- 3 Tbsp olive oil / canola oil
- 1 Tbsp water
- 1/4 small onion
- Scallions (green onions)
- 1/2 tsp minced ginger
- 1 Tbsp plum extract
- 5 Tbsp soy sauce
- 3 Tbsp olive oil / canola oil
- 1 Tbsp water
- 1/4 small onion
- Scallions (green onions)
- 1/2 tsp minced ginger
- 1 Tbsp plum extract
Cooking Instructions
Step 1
To remove the saltiness and fishy odor from the mackerel, soak it in rice water for about 20 minutes. Rice water helps to neutralize any unpleasant smells.
Step 2
After soaking for 20 minutes, rinse the mackerel 2-3 times under running water. Then, gently pat the surface dry with paper towels to remove excess moisture. This step is crucial for a cleaner cooking process and a crispier finish.
Step 3
We’re going to grill the mackerel without coating it in flour. Line your baking sheet or pan with parchment paper. Place the mackerel skin-side down on the parchment paper. Cook over medium heat, allowing the skin to crisp up.
Step 4
Flip the mackerel halfway through the cooking time. Let it grill until it’s beautifully golden brown and cooked through.
Step 5
Now, let’s prepare the flavorful soy sauce glaze. Start by adding 5 tablespoons of soy sauce to a small bowl.
Step 6
Next, add 3 tablespoons of olive oil or canola oil for richness and a glossy finish.
Step 7
Stir in 1 tablespoon of water to achieve the desired sauce consistency.
Step 8
Finely mince about 1/4 of a small onion. The sweetness of the onion will add depth to the sauce.
Step 9
Finely chop some scallions (green onions) as well. Their fresh aroma complements the fish wonderfully.
Step 10
Combine the minced onion with the soy sauce mixture in a small saucepan.
Step 11
Add 1/2 teaspoon of minced ginger. Ginger is excellent for masking any lingering fishy notes and adding a subtle warmth.
Step 12
Gently simmer the sauce mixture over low heat. Once it starts to bubble, add the chopped scallions and cook for another minute or so. Be careful not to overcook, as it can become too salty.
Step 13
Just before turning off the heat, stir in 1 tablespoon of plum extract. This adds a touch of sweetness and a beautiful sheen to the glaze.
Step 14
Pour the delicious, freshly made Chinese-style soy glaze generously over the grilled mackerel. The warm glaze will perfectly coat the crispy fish.
Step 15
Your Chinese-style soy glazed mackerel is ready! Enjoy this delightful dish with a side of steamed rice.
