For the Chicken Teriyaki Rice Bowl

  • 210g boneless, skin-on chicken thigh meat
  • 25g soy sauce (approx. 2.5 Tbsp)
  • 25g sake or mirin (approx. 2.5 Tbsp)
  • 25g water (approx. 2.5 Tbsp)
  • 1 egg
  • A little cooking oil (approx. 1 Tbsp)
  • A handful of baby greens or salad greens (for garnish)

Cooking Instructions

Step 1

To ensure tender and flavorful chicken, rinse the chicken thigh meat and soak it in milk for about 20 minutes to remove any gamey odor. (This step is optional but recommended!) After soaking, rinse the chicken thoroughly, pat it completely dry, and then heat about 1 tablespoon of cooking oil in a frying pan over medium heat. Sear the chicken for approximately 7 minutes until it’s nicely browned and slightly crispy on the outside.

While the chicken is searing, let’s prepare the teriyaki sauce. Measure out 25g each of soy sauce, sake (or mirin), and water. This recipe doesn’t include added sugar, but feel free to add 1-2 tablespoons of sugar if you prefer a sweeter sauce. (Note: A common teriyaki sauce ratio is 1:1:1:1 or 2:1:1:1 for soy sauce, sake, sugar, and water).

Pour the prepared teriyaki sauce over the nicely seared chicken thighs. Keep the heat at medium and let it simmer for about 3-5 minutes, turning the chicken pieces occasionally to ensure they are evenly coated and the sauce thickens. Once the sauce becomes syrupy and coats the chicken, your delicious teriyaki chicken is ready!

Now, let’s prepare the egg to accompany the rice bowl. Heat a little oil in a separate pan and crack in the egg. Scramble it gently with chopsticks or a spatula until it reaches a soft, fluffy consistency. Avoid overcooking so it remains moist and complements the rice.
