I received five bags of fresh oyster mushrooms from a dear friend who wished me well before the Lunar New Year. They were incredibly plump and hearty, unlike any I had seen before! I was initially worried because my family isn’t particularly fond of mushrooms, but these were exceptional. After enjoying three bags during the holiday, I decided to stir-fry the remaining two, and they retained their incredible freshness. I learned for the first time that oyster mushrooms have such a distinct aroma and a wonderfully chewy texture. I felt almost apologetic seasoning them, so I used a minimal amount of seasoning, and they turned out incredibly delicious! Main Ingredients

  • Blanched Oyster Mushrooms, 3 handfuls (approx. 300-400g)

Seasoning

  • Grapeseed oil, 2 Tbsp
  • Chicken powder (optional, for enhanced flavor), 1 tsp
  • Salt (adjust to taste), 1 tsp
  • Chopped green onions, a moderate amount
  • Toasted sesame seeds, a pinch
  • Sesame oil, a pinch

Cooking Instructions

Step 1

Begin by blanching the prepared oyster mushrooms in boiling water for about 1-2 minutes. This step helps to sanitize the mushrooms and enhances their chewy texture.

Step 2

After blanching, quickly rinse the mushrooms under cold water to cool them down. Then, gently squeeze out as much excess water as possible using your hands. Properly draining the mushrooms is crucial to prevent a soggy stir-fry and achieve a pleasant, firm texture.

Step 3

Tear the drained mushrooms into bite-sized pieces along their natural grain. Avoid tearing them too small, as larger pieces will provide a more satisfying chew.

Step 4

Heat grapeseed oil in a wok or large pan over medium-high heat. Add the torn oyster mushrooms and begin to stir-fry. Once the mushrooms start to soften, season with chicken powder and salt. It’s best to start with a small amount of salt and adjust to your preference. Finally, add the chopped green onions and stir-fry for another minute to release their aroma.

Step 5

Once everything is well combined and cooked, remove from heat. Drizzle with sesame oil for added fragrance and sprinkle with toasted sesame seeds. Transfer the delicious oyster mushroom stir-fry to a serving plate. Enjoy your delightful dish!
