Savory Chamnamul (Bujigyaengi) Acorn Pancake: Ulleungdo’s Delicacy at Home!
A healthy and delicious pancake made with Ulleungdo’s specialty Chamnamul (Bujigyaengi) and acorn jelly powder.
Bujigyaengi namul, also known as Chamnamul, is rich in water-soluble vitamins A and C. Prolonged soaking in water can cause these vitamins to leach out. Therefore, it’s best enjoyed raw as a fresh salad or lightly blanched as a side dish, rather than cooked for extended periods. In this recipe, we’ll harness the fresh, herbaceous aroma of Bujigyaengi and the chewy texture of acorn jelly to create a delightful pancake. It’s a simple yet unique taste of Ulleungdo island that you can easily enjoy in your own kitchen!
Pancake Ingredients- 70g fresh Chamnamul (Bujigyaengi)
- 1/2 medium onion
- 1 chili pepper (e.g., Cheongyang or red chili)
- 100g acorn jelly powder
- 150ml water
- 1 pinch of salt
Cooking Instructions
Step 1
First, thoroughly wash the Chamnamul (Bujigyaengi) under running water multiple times. It’s crucial to rinse it meticulously to remove any dirt or debris.
Step 2
Once cleaned, cut the Chamnamul into bite-sized pieces, about 2-3 cm long. If they are too long, it can be difficult to pan-fry.
Step 3
Peel the onion and slice it thinly into julienne strips. This will add a lovely sweetness and tenderness to the pancake.
Step 4
Remove the stem from the chili pepper and thinly slice it crosswise. If you prefer a bit of heat, use a Cheongyang chili; for added color, a red chili pepper works beautifully.

In a large bowl, combine the 100g of acorn jelly powder, 150ml of water, and a pinch of salt. Whisk thoroughly until smooth, ensuring there are no lumps. This creates your pancake batter.

Add all the prepared ingredients – the cut Chamnamul, sliced onion, and chili pepper – into the acorn jelly batter. Mix well using chopsticks or a spatula, ensuring every ingredient is evenly coated with the batter.
Step 7
Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle portions of the batter onto the hot pan and cook over medium-high heat until both sides are golden brown and crispy. Delicious Chamnamul acorn pancakes are ready when the edges are nicely browned!
