  • 2 handfuls of cabbage (approx. 200g)
  • 1/4 carrot
  • 1/2 onion
  • 2 eggs

Seasoning & Others

  • 1 tsp minced garlic
  • Olive oil, as needed
  • 2 pinches of salt
  • A little black pepper

Cooking Instructions

First, prepare the vegetables that will enhance the flavor of your rice bowl. Wash the cabbage thoroughly and shred it into thick strips about 2-3 cm long. Thinly shred the carrot and onion. When slicing, avoid shredding too finely, as the vegetables can become mushy easily; slightly thicker cuts will maintain a pleasant texture.

Heat a pan over medium-low heat and generously add olive oil. Add the minced garlic and sauté gently until fragrant, being careful not to burn it. Burning the garlic can result in a bitter taste, so monitor the heat closely.

Once the garlic is fragrant, add the shredded carrots and onions to the pan. Instead of high heat, stir-fry over medium-low heat to bring out the natural sweetness of the vegetables and soften them gently. Cook until the carrots and onions become slightly translucent.

Now, add the shredded cabbage to the pan. Cabbage wilts quickly, so sprinkle with 2 pinches of salt and a little pepper to season. Stir-fry until the cabbage softens and wilts down to create the ‘cabbage, carrot, and onion slaw’. You can also add other vegetables (e.g., bell peppers, zucchini) to customize your slaw for a richer flavor.

Heat another pan over medium-low heat, add a little olive oil, and make a fried egg. If you prefer a runny yolk, be careful not to break it. If you like a fully cooked egg, fry it to your preference. For a tender texture, avoid using too much oil.

Generously spoon the prepared cabbage, carrot, and onion slaw onto the freshly made fried egg. Then, pour about half a soju cup (approximately 30ml) of water into the pan. Immediately cover with a lid and steam over medium-low heat for 1-2 minutes. This method will cook the egg white until it’s moist and keep the yolk perfectly soft and runny, creating a ‘moist sunny-side up’ egg.
