Fried rice might be one of the simplest dishes, yet it requires the most effort with all the chopping of vegetables, right? Today, I’ll reveal a truly delicious recipe for you!

Vegetables

  • 1/2 Onion
  • 1/4 Green Onion
  • 1/4 Zucchini
  • 1/4 Bell Pepper

Other Ingredients

  • 5 Eggs (for 4 servings)
  • Pinch of Salt
  • Generous amount of Olive Oil
  • 4 bowls of Cold Rice (approx. 800g)

Essential Ingredients

  • 100g Butter (1 standard pack)
  • 200g Sausage
  • 2-3 Tbsp Tuna Extract

First, let’s get all the ingredients prepped.

I’m scrambling the eggs. I’m making 4 servings, so I’ve taken out 5 eggs generously!

We should add a little salt to the eggs for seasoning, right?

Now, let’s scramble the eggs! After making the scrambled eggs, let them cool down a bit. It’s best to add them at the very end after stir-frying the vegetables, as this preserves their texture and makes them taste great.

Use a generous amount of olive oil. My most important element: the garlic oil! (Although the recipe mentions green onion, the original description emphasizes ‘garlic oil’ which is typically made with garlic. Assuming ‘파기름’ here refers to aromatic oil from onion/scallion, we’ll proceed with green onion as per the ingredients.)

Start by stir-frying the hardest ingredient, carrots, along with the green onions.

Generously slice the butter! You’ll be using quite a bit of butter throughout the process, but trust me, once it’s all in and you taste it, the buttery flavor is never overwhelming or unpleasant!

Then, add the sausages and half of the sliced butter!

As the sausages cook, they’ll absorb the buttery aroma.

Once the sausages and carrots seem to be cooked to your liking, add all the remaining vegetables. Stir-fry over high heat for just about 2 minutes.

Next, take the other half of the butter you set aside and add it right in the middle of the vegetables.

Add about half a ladleful of tuna extract. Tuna extract is incredibly useful for stir-fries and various dishes because it adds a smoky flavor without needing actual grilling.

All the ingredients except the eggs and rice are now in the pan! Add more butter (about 1/4 of the remaining amount).

Now it’s time for the rice! When making fried rice, it’s always best to use cold or leftover rice. This ensures the grains stay separate and don’t become mushy.

Here’s a crucial tip: turn off the heat before adding the rice. Mix the rice with the other ingredients first to ensure everything is well combined. This step helps to dry out the rice moisture along with the vegetables.

Finally, add the last bit of butter (about 1/4 of the amount). Stir-fry thoroughly for about 3 minutes until all the moisture has evaporated. And voila! A delicious fried rice is born!
