Savory Bulgogi & Emmental Cheese Burritos with Seoul Milk Emmental Cheese

Main Ingredients
- Seoul Milk Emmental Cheese 4 slices
- Thinly sliced beef for Bulgogi 280g
- Tortillas 2 pieces
- 1 fresh egg
- 1/2 medium onion
- 200g warm cooked rice
- 1 Tbsp cooking oil
Bulgogi Marinade
- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- A pinch of black pepper
- 1 tsp sesame oil
- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)

Cooking Instructions
Step 1
Marinate the Bulgogi: For the best flavor, prepare this the day before! In a bowl, combine the thinly sliced beef for bulgogi with 3 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp corn syrup, a pinch of black pepper, and 1 tsp sesame oil. Mix well to ensure the meat is evenly coated. Marinating in advance allows the flavors to meld beautifully.
Step 2
Chop the Onion: Finely dice the onion. This will add a touch of sweetness and depth to your bulgogi filling. Finely chopped onions will cook down and integrate smoothly into the mixture.
Step 3
Cook the Bulgogi: Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the marinated beef and stir-fry quickly until it starts to brown. Add the chopped onion and continue to cook until the onion becomes translucent. Cooking at high heat prevents the meat from becoming tough and keeps the juices locked in.
Step 4
Add Cheese for Richness: Place 1 slice of Seoul Milk Emmental Cheese over the cooking bulgogi. As it melts, it will infuse the meat with a rich, nutty flavor and tenderize it further. Cook just until the cheese is slightly crisped. (This step is optional but enhances the cheesy aroma and flavor.)
Step 5
Assemble and Bake the Burrito: Lay out one tortilla. Place 1.5 slices of Seoul Milk Emmental Cheese on top, followed by a generous portion of the cooked bulgogi mixture. Tightly roll up the tortilla. Place the rolled burritos in a preheated 180°C (350°F) air fryer and bake for 10 minutes until golden brown. If you don’t have an air fryer, you can lightly oil a pan and cook over low heat, turning occasionally until golden.
Step 6
Prepare the Rice Filling: While the burritos are baking, use any remaining bulgogi mixture (or prepare a fresh batch as in steps 2 & 3) and stir in 1 beaten egg, scrambling it with the bulgogi until cooked. Then, add 200g of warm cooked rice and stir-fry everything together until well combined to create the ‘Bulgogi Rice’ filling. This rice mixture can be used for another burrito or enjoyed as a simple bulgogi rice bowl.
