  • 1 block Firm Tofu (preferably artisanal ‘chon-dubu’)
  • 10g Dried Anchovies
  • 10g Dried Kelp
  • 500ml Water

For a deeper and more savory flavor, consider using ‘chon-dubu’ (artisanal tofu) instead of regular firm tofu. Cut the tofu into approximately 2-3cm thick pieces, divided into four sections, as shown in the photo. Thicker pieces are delightful.

When braising the tofu, we will fry it without coating it in flour or starch. This method prevents the braising liquid from becoming gummy or overly thick.

If you coat the tofu in flour or starch and then fry it, the tofu might break down when braised, causing the sauce to become thick or pasty.

Place the sliced tofu in a lightly oiled pan, without any flour coating. Fry over medium heat until both sides are golden brown. This technique ensures the tofu holds its shape and achieves a beautiful color.

Instead of braising tofu directly in water, using an anchovy and kelp broth will significantly enhance the umami flavor, making the dish much more delicious. Simmer the dried anchovies and kelp in 500ml of water to create the broth.

Pour 300ml of the prepared anchovy-kelp broth into a pan. Add the soy sauce, tuna extract, dark soy sauce (or regular soy sauce), apple syrup, corn syrup, and minced garlic. Mix well to create the braising sauce.

Once the sauce begins to boil, carefully add the pre-fried tofu. Reduce the heat to medium and let it simmer until the tofu absorbs the sauce. Be mindful of the heat to prevent burning.

Gently flip the tofu occasionally while simmering over medium heat until the sauce has reduced to a nice glaze. This ensures the marinade penetrates the tofu evenly from all sides, making it flavorful throughout.

As the dish nears completion, stir in the remaining 2 tablespoons of minced garlic for an extra burst of fresh garlic flavor, then turn off the heat. The aroma of fresh garlic will make it even more delicious.
