Savory Braised Radish with Anchovies
How to Make Deliciously Savory and Refreshing Braised Radish with Anchovies, a Seasonal Side Dish
Autumn radish is said to be more beneficial than any tonic! Using the small radishes from my parents’ home, I’ve made a savory and refreshing braised radish dish with anchovies. The natural sweetness of the autumn radish combined with the slightly spicy and refreshing seasoning makes this a perfect ‘rice thief’ side dish – easy to make and incredibly delicious. The delightful texture of the tender radish and the rich flavor of the anchovies make this a truly special meal.
Main Ingredients- 100g Dried Anchovies (remove guts; for medium-sized anchovies, gut removal is optional)
- 1 large Korean radish (or 2 small ones)
- 1/3 stalk Green Onion (sliced diagonally)
- 8 cups Water
Seasoning- 8 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce
- 3 Tbsp Oligosaccharide (or corn syrup)
- 1 Tbsp Plum Extract
- 2 Tbsp Rice Wine (Sake or Mirin)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Minced Garlic
- 8 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce
- 3 Tbsp Oligosaccharide (or corn syrup)
- 1 Tbsp Plum Extract
- 2 Tbsp Rice Wine (Sake or Mirin)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, cut the radish into thick slices, about 3-4 cm each. For the dried anchovies, remove the head and intestines (guts) to ensure a clean, non-fishy taste. If you’re using medium-sized anchovies, you can skip removing the guts.
Step 2
Arrange the sliced radish at the bottom of a wide pot. Using a pot with a wide base will help the radish cook evenly and absorb the seasoning better.
Step 3
Scatter the prepared dried anchovies evenly over the radish. Adding a generous amount of anchovies will enhance the savory flavor of the dish.
Step 4
In a bowl, combine all the seasoning ingredients: soy sauce, fish sauce, oligosaccharide, plum extract, rice wine, gochugaru, toasted sesame seeds, and minced garlic. Mix them thoroughly to create the seasoning sauce.
Step 5
Pour the 8 cups of water into the pot over the radish and anchovies. Drizzle the prepared seasoning sauce evenly over everything. Bring the mixture to a boil over high heat, then reduce the heat to medium and let it simmer.
Step 6
While it’s simmering, ladle some of the broth from the pot over the radish periodically. This helps the radish absorb the flavors more effectively. Since the radish slices are thick, continue to braise over medium-low heat with the lid on until tender.
Step 7
Test the radish with a chopstick; it should be tender and easily pierced. Once the radish is fully cooked, add the diagonally sliced green onions on top and simmer for another minute. Then, turn off the heat. Your delicious braised radish with anchovies is ready!
