First, prepare your 2 medium potatoes. Wash them thoroughly. Cut them into bite-sized pieces, about 2-3 cm cubes. Cutting them smaller helps the seasoning penetrate better, making them much tastier.

Place the cut potatoes in a bowl of cold water and let them soak for 10 minutes to remove excess starch. This step is crucial to prevent the potatoes from breaking apart during the braising process, ensuring a neat finish.

In a separate bowl, combine 2 Tbsp soy sauce for a deep savory flavor, 1 Tbsp oyster sauce for that umami boost, 1 Tbsp sugar for a touch of sweetness, 3 Tbsp corn syrup or rice syrup for a beautiful glossy finish and enhanced sweetness. Once the potatoes are lightly seared, reduce the heat to low. Pour in the 300ml of water and add all the prepared seasoning mixture. Stir gently to ensure the potatoes and seasoning are well combined.
