Pork Ribs

  • 9 Pork Back Ribs (approx. 500-600g)
  • 2 Bay Leaves
  • Pinch of Whole Peppercorns
  • 1/2 cup Soju (100ml)

Vegetables

  • 1/2 Onion
  • 1/4 Carrot
  • 1/2 to 1 Green Onion

Cooking Instructions

Step 1

First, soak the pork ribs in cold water for about 30 minutes to remove blood. In a pot, add the pork ribs, 2 bay leaves, a pinch of whole peppercorns, and 1/2 cup of soju. Add enough water to cover the ribs and bring to a boil over high heat.

Once the water comes to a rolling boil, reduce the heat to medium and simmer for about 20-25 minutes, or until the ribs are fully cooked. It’s important to boil them thoroughly.

You’ll notice impurities floating to the surface as the ribs cook. This step is crucial for removing any gamey odors and ensuring a clean flavor for your ribs.

Remove the cooked ribs from the pot and rinse them thoroughly under cold running water. Make sure to clean off any impurities, especially those stuck between the bones, for a perfectly clean dish.

Arrange the cleaned pork ribs neatly in the pot you’ll use for braising. Presenting them nicely in the pot will make the final dish look even more appetizing.

Now, let’s make the delicious seasoning sauce. In a bowl, combine the soy sauce, minced garlic, sugar, corn syrup (or plum extract), black pepper, and optional MSG or salt. Mix well. Pour 2 cups of water into the empty seasoning bowl, rinse out any remaining sauce, and add it to the pot with the ribs.

Place the pot with the ribs and seasoning sauce over high heat and bring it to a boil.

While the ribs are boiling, thinly slice the onion into strips. Slicing them not too thinly will help them maintain their texture without becoming mushy during the braising process.

Similarly, cut the carrot into thick julienne strips. They will add a lovely color and a pleasant bite to the dish.

Once the liquid in the pot reaches a vigorous boil, reduce the heat to medium. Avoid keeping the heat too high, as this can cause the sauce to burn.

Allow the ribs to simmer gently over medium heat, letting the sauce reduce and the flavors to meld. Cover the pot and stir occasionally to ensure even cooking and prevent sticking.

When the sauce has started to thicken slightly, add the prepared onion and carrot. The moisture from the vegetables will help prevent the sauce from reducing too much and will add extra flavor.

If you have chestnuts, add them at this stage. If using pre-cooked and peeled chestnuts that have been stored in the freezer, they might be coated in sugar – you can add them as is. The chestnuts will cook through and add a lovely sweetness.

Once the chestnuts are cooked and everything is simmering well, add the roughly chopped green onion. Cook for another 1-2 minutes to infuse the aroma. The fresh, slightly pungent flavor of the green onion will enhance the overall taste of the braised ribs.

Turn off the heat when the sauce has reached your desired consistency – slightly thickened and coating the ribs. It’s best to leave a little moisture so the dish doesn’t become too dry.
