Cooking Instructions

Step 1

Prepare the seasoning ingredients: cooking wine (mirin) and soy sauce.

Cut the firm fish cake and scallops into bite-sized pieces. Slice the radish to a similar size as the fish cake and scallops. Cutting ingredients to similar sizes ensures even cooking and optimal flavor.

In a deep pot, place the sliced radish at the bottom. Pour in 50ml of the soba noodle sauce and 50ml of water. Simmer over medium heat until the radish is tender and the liquid is reduced to a glaze. This pre-braising step infuses the radish with delicious flavor.
