Main Ingredients
  • 350g bean sprouts
  • 1/2 cup dried anchovies (medium-sized, for soup)
  • 1 stalk green onion (scallion)
  • 1 red chili pepper

Seasoning Sauce
  • 1 Tbsp minced garlic
  • 4 Tbsp soy sauce
  • 1 Tbsp sugar
  • 2 Tbsp gochugaru (Korean chili flakes)
  • A pinch of sesame seeds

Cooking Instructions

Step 1

For best flavor and texture, use medium-sized dried anchovies (for soup) rather than very small ones. Remove the innards of the anchovies to reduce any bitterness.

Step 2

Trim any yellowed or damaged root ends from the bean sprouts. Wash them thoroughly under running water until clean. Drain them well in a colander.

Step 3

In a bowl, combine 1 Tbsp minced garlic, 4 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp gochugaru, and a pinch of sesame seeds. Mix well to create the seasoning sauce. If you prefer a sweeter taste, you can add 1 Tbsp of corn syrup or honey.

Step 4

Wash the red chili pepper and green onion. Slice them lengthwise into thin strips (julienne). This will add color and aroma to the dish.

Step 5

In a wide pan or pot, add the prepared bean sprouts and anchovies. Pour in half a cup of water. Cook over high heat without covering the pan. Covering the pot can diminish the fresh, crisp flavor of the bean sprouts.

Step 6

Once the bean sprouts have wilted and softened, add the prepared seasoning sauce. Stir gently to ensure the sauce coats the bean sprouts and anchovies evenly. Top with the julienned green onion and red chili pepper. Reduce the heat to medium-low and let it simmer until the sauce has thickened slightly.

Step 7

When the sauce has reduced and is well-absorbed by the ingredients, add a pinch of black pepper if desired, and finish by sprinkling generously with sesame seeds. Your delicious braised bean sprouts are ready to be enjoyed with a bowl of hot rice!
