Begin by preparing the vegetables for your shabu-shabu. Wash the napa cabbage thoroughly and cut it in half. Separate the bok choy leaves and wash them carefully. Trim the ends of the mushrooms and slice them into bite-sized pieces.

Gently press the thinly sliced beef for shabu-shabu with paper towels to remove excess blood. Removing the blood helps keep the broth clear and enhances the overall flavor.

Julienne the red and yellow bell peppers by removing the seeds and slicing them thinly. Wash the baby greens thoroughly and drain any excess water. These colorful additions will bring freshness and vibrancy to your shabu-shabu.
