  • Beef Brisket (Usambgyeop) 500g
  • Green Onions or Scallions 2 Tbsp (chopped)

Special Soy Sauce

  • Water 2 paper cups (approx. 400ml)
  • Korean Soy Sauce (Guk-ganjang) 3 Tbsp
  • Sugar 2 Tbsp
  • Cooking Wine (Mirin, etc.) 2 Tbsp

Cooking Instructions

Heat a pan and add the beef brisket to grill. (There’s absolutely no need to add oil! The brisket itself releases plenty of fat. If you’re using a leaner cut like pork neck, you might want to add a little oil to the pan.)

While the meat is cooking, use paper towels to carefully wipe away any excess oil that accumulates in the pan. It’s important to grill the beef brisket until it’s nicely browned and slightly crispy. Removing the excess grease is key to preventing a greasy rice bowl and ensuring a clean flavor.

Now, let’s make the delicious soy sauce! (For 3-4 servings) Pour 2 paper cups of water (about 400ml) into a bowl. Add 3 tablespoons of Korean soy sauce, 2 tablespoons of sugar, and 2 tablespoons of cooking wine. For an extra burst of flavor, add 2 tablespoons of chopped green onions or scallions. (Tip: If you’re using regular soy sauce (Jin-ganjang), reduce the amount to 1.5 tablespoons, as its saltiness can vary. Taste and adjust the seasoning as needed to avoid an overly salty sauce.)

Add the well-grilled beef brisket to the prepared soy sauce mixture. Simmer together for a short period, no more than about 5 minutes. The goal is to let the sauce coat the meat without overcooking it, which can make it tough. Just enough time for the flavors to meld.
