Savory Beef Brisket and Fresh Vegetable Summer Rolls
Clean Out the Fridge! Hearty Beef Brisket Summer Rolls Recipe
When we were dating, I thought my husband bought me these delicate-looking dishes like shabu-shabu and summer rolls to be considerate. Turns out, he just bought them because he wanted to eat them himself! Today, I’m preparing another batch of summer rolls for my husband. These rolls are packed with fresh vegetables and tender beef brisket, offering a burst of flavor in every bite. Enjoy this restaurant-quality dish right at home!
Summer Roll Ingredients- 4 sticks imitation crab meat (surimi)
- 1/2 bell pepper (each color, e.g., red, yellow)
- 1/2 carrot
- 1/2 onion
- 10 perilla leaves (shiso leaves)
- A handful of bean sprouts
- 400g beef brisket (thinly sliced)
- 1/4 pineapple (or 2-3 slices canned pineapple)
- Plenty of rice paper wrappers (about 20-25 sheets)
- 3-4 Tbsp peanut sauce
- 3-4 Tbsp chili sauce
Cooking Instructions
Step 1
Feel free to use any vegetables you have on hand in your refrigerator for these summer rolls! The next steps will guide you through washing and preparing them.
Step 2
Cut all your vegetables (imitation crab sticks, bell peppers, carrot, onion, perilla leaves, etc.) into uniform, julienne-style strips, approximately 0.5 cm thick. Presentation is key for summer rolls; making them look appealing truly enhances the dining experience.
Step 3
To remove excess fat, steam the beef brisket for just 2-3 minutes over high heat once the water is boiling. This quick steaming process renders the fat and makes the beef more tender and less greasy. Be careful not to overcook.
Step 4
Arrange all the prepared ingredients—the julienned vegetables, steamed beef brisket, and pineapple—beautifully on a serving platter. You can also add pickled radishes or other fresh greens if you like. Serve the peanut sauce and chili sauce in small dipping bowls for easy access.
Step 5
Lightly dip a rice paper wrapper in warm water until pliable. Place your desired fillings onto the wrapper and roll it up snugly, similar to making a spring roll or a small burrito. Dip into your favorite sauce and enjoy! Bon appétit!
