Main Ingredients- 300g thinly sliced beef for bulgogi
- A good amount of fresh perilla leaves (깻잎)

Beef Marinade- 4 Tbsp soy sauce

Cooking Instructions
Step 1
First, place the thinly sliced bulgogi beef in a bowl. Add 4 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp sesame oil, 2 Tbsp mirin, 0.2 tsp black pepper, and a pinch of ginger powder. Gently mix with your hands, ensuring the marinade is evenly distributed throughout the beef. This step not only tenderizes the meat and removes any gamey odor but also enhances its savory flavor.
Step 2
Wash the perilla leaves thoroughly under running water. After washing, drain them very well by shaking them gently or patting them dry with a clean kitchen towel. Excess water can make the rolls soggy. Peel the carrots and julienne them into thin, long strips. The amount of perilla leaves and carrots isn’t strictly defined; adjust them according to the quantity of beef you’re using. Feel free to add other vegetables like cucumber or bell pepper for extra flavor and texture.

Now, it’s time to roll! Lay the marinated beef slices flat on a clean plate or cutting board. Place a few perilla leaves on top of the beef, followed by a layer of the julienned carrots. Starting from one end, carefully and snugly roll the beef and vegetables together, similar to making a sushi roll. Tip: Using two perilla leaves layered together can help keep the filling secure inside the roll.

Continue this process, rolling the beef, perilla leaves, and carrots until you have used up all the marinated beef. Arrange the rolled beef and vegetable bundles seam-side down. This helps them stay rolled without needing toothpicks. If you find they are difficult to keep together, you can secure them with a small bamboo skewer.

Heat a frying pan over medium-low heat. Place the rolled beef and vegetable bundles in the pan with the seam side facing down. Let them cook until the bottom is lightly browned, about 2-3 minutes. Then, gently roll them around in the pan to ensure they are evenly cooked and golden brown on all sides. Be mindful of the heat to prevent burning, as the beef is thinly sliced and cooks quickly.
