In a bowl, combine 150g of ground beef with 1 tsp soy sauce, 1 tsp oligosaccharide, 1 Tbsp minced garlic, 1 Tbsp chopped scallions, a pinch of salt, and a pinch of black pepper. Mix well with your hands and let it marinate for about 10 minutes. This step significantly enhances the beef’s flavor.

While the beef is marinating, prepare the vegetables. Wash the eggplant thoroughly, remove the stems, and slice it diagonally about 0.5cm thick. Then, cut each slice in half to create bite-sized pieces. Slice the zucchini into half-moon shapes, about 0.5cm thick. Remove the seeds from the bell pepper and slice it into strips of similar thickness. Cutting the vegetables uniformly helps them cook evenly.

Now, let’s start stir-frying! Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the marinated ground beef, breaking it up with your cooking utensil so it doesn’t clump. Stir-fry until the beef is browned on the outside.

Once the beef is almost cooked through, add the sliced zucchini and eggplant to the pan. Continue to stir-fry. Eggplant tends to absorb oil, so cooking over medium heat rather than high heat is recommended. Cook until the eggplant becomes translucent and starts to soften.

When the zucchini and eggplant are about half-cooked and tender, add the julienned bell pepper. Bell peppers lose their crispness if overcooked, so adding them near the end and stir-frying briefly is best for maintaining their texture.
