  • 15 stalks Young Scallions
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper

Cooking Instructions

Step 1

First, prepare the base batter for your pancake. In a bowl, combine 1 cup of flour, the whites from 1 egg, and 1/3 tsp of salt. Gradually add water while mixing until you achieve a smooth, lump-free batter. Straining the batter through a fine-mesh sieve will result in a smoother surface and a thinner, crispier pancake. Set the batter aside. Next, trim any root ends from the young scallions and cut them into approximately 5cm lengths. Slice the bacon into 1cm thick pieces. Deseed the green and red bell peppers and slice them thinly on an angle for a pop of color. Finally, lightly beat the egg yolk in a separate small bowl.

Step 2

Heat a generous amount of cooking oil in a non-stick pan over medium-low heat. Ladle a portion of the prepared batter onto the hot pan and spread it thinly into a round shape. Once the batter begins to set slightly, arrange the cut scallions evenly over the surface. Then, artfully place the sliced green and red peppers on top. Drizzle the beaten egg yolk over the scallions and peppers. Lastly, generously scatter the sliced bacon pieces over everything. When the edges of the pancake turn golden brown and the bottom is cooked through, carefully flip it over. Cook for another 3-4 minutes, or until the bacon is crispy and the entire pancake is beautifully golden brown on both sides. Adjusting the heat is key to ensure it cooks through without burning.
