Main Ingredients- 5 handfuls of Bacon (approx. 200g)
- 4 Fresh Shiitake Mushrooms

Step 1
Thoroughly wash the 4 fresh shiitake mushrooms under running water. Trim off the tough stems. Then, slice the mushrooms into about 0.5cm thick pieces, maintaining their shape. Slicing them this way ensures a pleasant texture and allows them to absorb flavors beautifully when cooked.
Step 2
Prepare about five strips of bacon. You can adjust the thickness to your preference, but cutting them into lengths of approximately 1.5-2cm usually works well, preventing them from breaking apart too much during cooking.

Heat a pan over medium heat. You can add a tiny bit of cooking oil, or if the bacon renders enough fat, you might be able to skip the oil. Add the sliced bacon and cook slowly until it turns golden brown and crispy, rendering its delicious fat.

Once the bacon is nicely browned, add the sliced shiitake mushrooms to the pan. Stir-fry them together with the bacon for about 2-3 minutes, or until the mushrooms soften and their earthy aroma intensifies. They will absorb the flavorful bacon fat.

When the mushrooms are cooked through, reduce the heat to low or turn it off temporarily. Drizzle 1 tablespoon of sesame oil around the edges of the pan. This will infuse the dish with a wonderful nutty aroma.

Finally, add a generous amount of sesame seeds for a finishing touch. Gently crush the seeds between your palms before sprinkling them over the stir-fry to enhance their fragrance. Give the pan a gentle shake or stir with a spatula to ensure the sesame oil and seeds are evenly distributed.
