Creative Bacon and Scrambled Egg Fried Rice Recipe Using Leftover Rice
Quickly rummage through your fridge and you might find ingredients for a satisfying fried rice! Eggs and bacon are staples, often used for sandwiches, but today we’re giving them a rice-based twist. Even without many seasonings, the bacon adds a delightful saltiness and umami to the dish. Combined with fluffy scrambled eggs, it’s a winning combination! This simple fried rice is perfect for any meal, and a great option to share with the kids.
Ingredients- 1 bowl of cooked rice (about 1.5 servings)
- 1 stalk of green onion
- 5 large eggs
- 8 strips of bacon
- 2 Tbsp oyster sauce
- Pinch of black pepper
Cooking Instructions
Step 1
First, finely chop the green onion. I find that adding a generous amount of green onion makes the fried rice even tastier, so feel free to adjust to your liking.
Step 2
Next, finely mince the bacon strips. Mincing the bacon helps distribute its savory flavor throughout the rice.
Step 3
In a bowl, whisk the 5 eggs until well combined. For an extra-smooth scramble, you can strain the beaten eggs through a fine-mesh sieve. While not strictly necessary, this step results in a more delicate texture.
Step 4
Heat a wok or a large skillet over medium heat. Add the minced bacon and cook until it becomes golden brown and crispy, rendering its fat.
Step 5
Once the bacon is crispy, remove it from the pan and set aside on a paper towel-lined plate to drain excess grease. Discard most of the bacon fat from the pan, leaving just a little for flavor.
Step 6
Add a generous amount of cooking oil to the pan. Add the chopped green onions and stir-fry until fragrant over medium-low heat. This step creates aromatic ‘scallion oil’ which enhances the fried rice’s flavor.

Push the sautéed scallions to one side of the pan. Pour the beaten eggs into the empty space. As the eggs begin to set, gently stir them with a spatula or chopsticks to create scrambled eggs.

When the eggs are partially cooked and scrambled, mix them together with the sautéed scallions. Combine the fluffy scramble with the fragrant scallions.

Season with a pinch of black pepper and mix well. This adds a subtle depth of flavor to the eggs and scallions.

Add the crispy, reserved bacon back into the pan. Stir-fry everything together, ensuring the bacon is evenly distributed amongst the scrambled eggs and scallions.

Add the leftover cold rice to the pan. Break up any clumps of rice using your spatula. To achieve a fluffy texture, it’s helpful to hold the spatula with both hands and ‘cut’ through the rice as you stir, mixing vertically.

Once the rice is well-fried, add the oyster sauce. Pour it around the edges of the pan and stir everything together. While soy sauce can be a substitute, oyster sauce provides a richer, deeper umami flavor.
