  • 5 eggs
  • 3 strips bacon
  • 1/3 carrot
  • 2 Tbsp chives or green onions (finely chopped)

First, prepare the filling ingredients for the egg roll. Finely mince the carrot and chop the chives (or green onions). Dice the bacon into small, bite-sized pieces. Since bacon is naturally salty, no additional salt is needed for seasoning the eggs.

Crack the 5 eggs into a bowl. Add the minced carrot, chopped chives, and diced bacon. Whisk everything together thoroughly with chopsticks or a whisk until the egg yolks and whites are well combined. Ensure the bacon pieces are separated and evenly distributed.

Heat a non-stick frying pan over medium heat. Add cooking oil and spread it evenly across the entire surface of the pan, perhaps using a paper towel to create a thin, even coating. This helps prevent the egg from sticking and ensures a beautifully cooked roll.

Once the pan is adequately heated, carefully pour in about 1/4 of the prepared egg mixture. Tilt the pan to allow the egg to spread thinly and evenly across the bottom. As soon as the edges of the egg begin to set, move on to the next step.

When the edges of the egg layer are cooked and it’s possible to roll it, use chopsticks or a spatula to gently roll the egg towards one side of the pan. Starting with a thin roll makes it easier to create a thick and attractive egg roll later on.

Push the rolled egg to one side of the pan. Pour another 1/4 portion of the egg mixture into the empty space, lifting the previously rolled egg slightly so the new mixture can flow underneath. Once the new layer of egg begins to set, roll the original roll into this new layer, continuing to the end. Repeat this process 3 to 4 times, or until all the egg mixture is used. Each layer will build up to create a wonderfully thick and satisfying egg roll.

You’ve now used all the egg mixture to complete your bacon and egg roll. Gently rotate it in the pan to shape it and ensure all sides are evenly browned. Carefully transfer the cooked egg roll from the pan to a plate or cutting board.
