Mentaiko Bibimbap Ingredients
  • 50g Mentaiko (seasoned pollock roe)
  • 1 Tbsp Mayonnaise (heaping)
  • 1 Tbsp Perilla Oil
  • 1 Cheongyang Pepper
  • A little Spinach (optional)
  • A little Bean Sprouts (optional)

Cooking Instructions

Step 1

First, prepare the vegetables to accompany the bibimbap. I’m using spinach and bean sprouts that I had on hand. Wash the spinach thoroughly, blanch it briefly, squeeze out excess water, and season it as a side dish. Prepare the bean sprouts by boiling them as well. (This step can be skipped; mentaiko mayo alone is delicious.) Finely mince the Cheongyang pepper, removing the seeds. Adjust the spiciness to your preference.

Step 2

For the mentaiko, make a few shallow slits on the thin membrane with a knife. Then, using the back of the knife, gently scrape out the roe from inside the membrane into a bowl. It’s best to be gentle to avoid mashing the mentaiko.

Step 3

To the bowl with the scraped mentaiko, add 1 heaping tablespoon of mayonnaise and 1 tablespoon of perilla oil for a nutty aroma. Add the finely minced Cheongyang pepper.

Step 4

I mentioned adding the minced Cheongyang pepper earlier, but I forgot and it’s not in the photo.^^ (For the actual recipe, be sure to add the Cheongyang pepper at this step!) Now, mix everything thoroughly until well combined to create the seasoned topping. Ensure all ingredients are smoothly blended.

Step 5

Spoon a generous amount of the prepared mentaiko mayo topping over warm, cooked rice. If you’ve prepared the spinach and bean sprouts, adding them to the bibimbap will make it even more satisfying and delicious. Mix it all together, and take a big bite! The savory, salty mentaiko, creamy mayonnaise, and spicy pepper create a symphony of flavors that will fill your mouth. It’s absolutely delicious!
