Savory Braising Sauce

  • Soy Sauce, 80ml (about 1/3 cup)
  • Water, 350ml (about 1.5 cups)
  • Honey, 3 Tbsp
  • Plum Extract, 1 Tbsp
  • Minced Garlic, 2 Tbsp (generous)
  • Black Pepper, a pinch (2 twists)

Cooking Instructions

Begin by preparing the shrimp. Rinse them thoroughly under cold running water. Trim the long, sharp whiskers of the shrimp with scissors for a cleaner presentation and easier eating. Wash the bean sprouts and crown daisy (or water parsley) and drain them well. Adding water parsley will enhance the aroma and flavor.

Now, let’s make the delicious braising sauce. In a bowl, combine 350ml of water, 80ml of soy sauce, 3 tablespoons of honey, 1 tablespoon of plum extract, 2 generous tablespoons of minced garlic, and a pinch of black pepper (about two twists). Whisk everything together until well combined. Soy-braised shrimp is best enjoyed not too salty, so feel free to adjust the soy sauce and honey to your preference. (Note: While the original Sumine Banchan recipe might suggest adding more soy sauce, this ratio is perfectly balanced.)

In a deep pot, spread the washed and drained bean sprouts evenly across the bottom. As the bean sprouts cook, they will release moisture, creating a flavorful base for the shrimp.

Arrange the prepared fresh shrimp neatly on top of the bean sprouts, ensuring they are not overlapping. This layering helps the shrimp cook evenly and absorb the sauce.

Pour the prepared braising sauce evenly over the shrimp and bean sprouts. Make sure to cover all the ingredients generously with the sauce.

Place the pot on the stove over medium-high heat. Once the sauce begins to boil, use a spoon to ladle the simmering sauce over the shrimp. Repeat this basting process a few times to ensure the shrimp are thoroughly coated and develop a glossy finish.

Cover the pot and cook over high heat for no more than 15 minutes. This timeframe is ideal for cooking the bean sprouts to a crisp-tender texture while keeping the shrimp perfectly tender and moist.
