Ingredients
  • 2 sheets of square fish cakes
  • 150g of bean sprouts
  • 1 handful of chives
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp corn syrup (or honey/sugar)
  • 1 Tbsp sesame oil
  • 0.5 Tbsp sesame seeds
  • A pinch of black pepper
  • Generous amount of cooking oil

Cooking Instructions

Step 1

First, wash the 150g of bean sprouts under cold running water. Rinse them gently to remove any earthy smell and maintain their crispness. After washing, place them in a colander and let them drain thoroughly. It’s important to remove excess water, as it can make the stir-fry soggy.

Step 2

Cut the 2 sheets of square fish cakes into long, bite-sized strips, about 1cm thick. For extra tenderness and to remove excess oil, you can briefly blanch the fish cakes in boiling water before cutting.

Step 3

Heat a generous amount of cooking oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and sauté until the garlic is fragrant and lightly golden brown. This step infuses the oil with a wonderful garlic aroma.

Step 4

Once the garlic is fragrant, add the cut fish cakes to the pan. Increase the heat to medium and stir-fry for about 2-3 minutes, allowing the fish cakes to absorb some of the garlic oil and become tender. Make sure to stir occasionally to prevent sticking.

Step 5

When the fish cakes are softened and well-coated with the garlic oil, add the drained bean sprouts. Stir-fry quickly over high heat. Avoid overcooking the bean sprouts, as they will lose their crisp texture. Aim to cook them just until they are tender-crisp.

Now, it’s time to add the seasonings. Pour 1 Tbsp of soy sauce and 1 Tbsp of oyster sauce into the pan, preferably around the edges where they can sizzle. Stir-fry everything rapidly to ensure the sauces are evenly distributed. Taste and adjust with more soy sauce if needed for saltiness.

Step 7

Add 1 Tbsp of corn syrup (or your preferred sweetener like honey or sugar) and give it a quick stir-fry. This will add a lovely glossy sheen and a touch of sweetness that balances the savory flavors.

Step 8

Finally, add a handful of chopped chives. Toss everything together for about 30 seconds. The chives add a fresh aroma and a vibrant splash of color to the dish.

Step 9

Just before turning off the heat, sprinkle a pinch of black pepper. Drizzle in 1 Tbsp of sesame oil and add 0.5 Tbsp of sesame seeds. This final touch adds a rich, nutty aroma and flavor.
