Savory and Sweet SPAM Potato Stew

Transform your leftover SPAM and potatoes into a delightful meal! The savory SPAM and fluffy potatoes come together to create a true ‘rice thief.’ Here’s a recipe for SPAM Potato Stew that anyone can make deliciously with simple seasonings.
Main Ingredients- 2 medium potatoes
- 1 can (340g) SPAM
- 1/2 bunch green onions
- 1 medium onion
- 2 Korean chili peppers (cheongyang)
Seasoning Ingredients- 1 Tbsp (15ml) Gochujang (Korean chili paste)
- 1 Tbsp (7ml) Gochugaru (Korean chili flakes)
- 4 Tbsp (60ml) Soy sauce
- 1 Tbsp (10g) Sugar
- 0.5 Tbsp (7.5ml) Doenjang (fermented soybean paste)
- 1 Tbsp (15g) Minced garlic
- A pinch of black pepper
- 1 Tbsp (15ml) Gochujang (Korean chili paste)
- 1 Tbsp (7ml) Gochugaru (Korean chili flakes)
- 4 Tbsp (60ml) Soy sauce
- 1 Tbsp (10g) Sugar
- 0.5 Tbsp (7.5ml) Doenjang (fermented soybean paste)
- 1 Tbsp (15g) Minced garlic
- A pinch of black pepper
Cooking Instructions
Step 1
First, prepare the vegetables. Peel the potatoes and cut them into 1.5cm thick pieces. Roughly chop the onion. Slice the green onions diagonally and mince the Korean chili peppers.
Step 2
In a deep pot or wok, place the sliced potatoes at the bottom. Layer the chopped onion, minced chili peppers, and sliced green onions on top of the potatoes. Layering the ingredients like this helps them cook evenly.
Step 3
Once all the vegetables are in the pot, cut the SPAM into bite-sized pieces and arrange them attractively on top of the vegetables. We will cook it without stirring the SPAM after placing it.
Step 4
Now it’s time to add all the seasoning ingredients. Measure and add the Gochujang, Gochugaru, soy sauce, sugar, Doenjang, minced garlic, and black pepper directly over the ingredients in the pot.
Step 5
Next, add water. Pour just enough water to barely cover the SPAM, meaning the top part of the SPAM should be slightly visible. Too much water can dilute the flavor.
Step 6
Bring the stew to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 20 minutes with the lid on. Cook until the potatoes are completely tender and the flavors have melded together. It’s advisable to stir occasionally to prevent sticking.
