Main Ingredients for Braised Chicken- Chicken drumettes, 2 packs (approx. 600g)
- Sweet potato, 1 (medium-sized, seedless variety preferred)
- Carrot, 1/3
- Onion, 1 (medium-sized)
- Cheongyang chili pepper, 1
- Red chili pepper, 1
- Green onion, 1/2 stalk
- Tteokbokki rice cakes, 8 pieces (adjust to preference)
Braising Sauce Ingredients- Soy sauce, 8 Tbsp
- Oyster sauce, 1 Tbsp
- Minced garlic, 1 Tbsp
- Sugar, 2 Tbsp
- Oligodang (corn syrup), 1 Tbsp (for gloss and sweetness)
- Cooking wine (Mirin), 3 Tbsp (to remove gaminess)
- Ginger powder, 0.2 tsp (or 1/4 tsp minced fresh ginger)
- Sesame oil, 0.5 Tbsp (for finishing)
- Black pepper, a pinch
- Soy sauce, 8 Tbsp
- Oyster sauce, 1 Tbsp
- Minced garlic, 1 Tbsp
- Sugar, 2 Tbsp
- Oligodang (corn syrup), 1 Tbsp (for gloss and sweetness)

Cooking Instructions
Step 1
First, prepare the vegetables. Peel the sweet potato and cut it into bite-sized pieces (about 2-3 cm). Chop the onion and carrot into large chunks. Slice the green onion, red chili pepper, and Cheongyang chili pepper diagonally. Rinse the tteokbokki rice cakes in water to prevent them from sticking together.

Rinse the chicken drumettes under cold running water to remove any impurities. Pat them dry thoroughly with paper towels.

In a large pot, add enough water to cover the chicken drumettes and bring it to a rolling boil over high heat. Once boiling, add the chicken and blanch for about 3-5 minutes to remove any impurities and gamey odor. This step will result in a cleaner tasting braising liquid.

Drain the blanched chicken drumettes using a colander. (Correction based on previous step, ensuring consistency).

Now, let’s make the delicious braising sauce! In a bowl, combine the soy sauce (8 Tbsp), oyster sauce (1 Tbsp), minced garlic (1 Tbsp), sugar (2 Tbsp), oligodang (1 Tbsp), cooking wine (3 Tbsp), ginger powder (0.2 tsp), and a pinch of black pepper. Mix well until the sugar is dissolved.
Step 6
Place the blanched chicken drumettes into a clean pot. Pour in 4 cups (approx. 800ml) of cold water. This is enough liquid for the chicken to cook.
Step 7
Pour all the prepared braising sauce into the pot. Stir well to coat the chicken drumettes evenly with the sauce.
Step 8
Now, bring it to a boil over high heat with the lid off. As it boils, skim off any oil or foam that rises to the surface with a spoon; this will make the sauce cleaner and more delicious. Let it simmer for about 10 minutes until the chicken is halfway cooked.

Once the chicken is partially cooked, it’s time to add the prepared vegetables. Add the chopped onion, carrot, sweet potato, Cheongyang chili pepper, and red chili pepper to the pot.

After adding all the ingredients, reduce the heat to medium and continue to simmer for about 15-20 minutes, or until the sweet potatoes are well-infused with flavor. It’s good to stir occasionally to ensure everything cooks evenly. Be mindful of the heat to prevent burning, as high heat can cause sticking.

Check if the sweet potatoes and chicken are fully cooked by piercing them with a fork; they should be tender. Once everything is cooked through, proceed to the next step.

Add the tteokbokki rice cakes and cook for another 3-5 minutes, stirring gently, until the rice cakes are coated in sauce and softened. Avoid stirring too vigorously to prevent the rice cakes from breaking apart.

Finally, add the sliced green onions and simmer for another moment to release their aroma before turning off the heat. Drizzle with 0.5 Tbsp of sesame oil at this stage for an extra nutty fragrance.
