Chicken Drumette Preparation

  • 1 cup milk (for removing gamey smell)

Delicious Braising Sauce

  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking wine (mirin)
  • 1 Tbsp corn syrup (or oligosaccharide)
  • 1 Tbsp minced garlic
  • 2 Tbsp ginger juice
  • Pinch of black pepper
  • Pinch of salt (to taste)
  • 1/2 green onion, chopped

Cooking Instructions

First, prepare the chicken drumettes. Wash them thoroughly and remove any excess fat or skin fragments from the surface for a cleaner final dish.

To remove any gamey odor from the drumettes, soak them in milk for about 30 to 40 minutes. For more effective marination, place the drumettes and milk in a plastic bag and seal it, allowing the milk to penetrate evenly. (1 cup of milk is sufficient.)

Remove the drumettes from the milk and rinse them thoroughly under cold running water. It’s crucial to completely wash away any residual milk smell.

Season the thoroughly rinsed drumettes. Mix them with a pinch of salt, pepper, a little minced garlic, and a bit of ginger juice. Covering the seasoned drumettes with plastic wrap and letting them marinate in the refrigerator for at least 1 hour will allow the flavors to penetrate deeply, making them more delicious.

Place the seasoned drumettes in a heated pan, cover with a lid, and cook over medium-low heat. Proceed to the next step once the drumettes are cooked halfway through and are tender. (This may take about 10-15 minutes.)

Now, let’s make the delicious braising sauce. Combine 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp cooking wine, 1 Tbsp corn syrup, 1 Tbsp minced garlic, and 2 Tbsp ginger juice. Pour this sauce evenly over the drumettes in the pan. Uncover and cook over medium heat, turning the drumettes frequently to coat them in the glaze until the sauce thickens and coats the chicken. Be careful not to burn them.
