Super Easy Scallion Kimchi Salad Using Leftover Scallions
What do you do with leftover scallions in your fridge? I decided to make a delicious Scallion Kimchi Salad using the ones I had left after making scallion jeon. Adding seaweed (kim) gives it a wonderfully savory flavor, and it brings out the natural sweetness of the scallions, making it truly delicious! While scallions are tasty with a spicy dipping sauce, this was my first time trying them with seaweed. The added seaweed makes them even more savory and appetite-stimulating! This is a simple yet elegant side dish. Make your dining table more abundant with this Scallion Kimchi Salad!
Ingredients- Scallions (trimmed and washed)
- Seasoned Seaweed (kim, to taste)
- Sesame Oil
- Soy Sauce (just a tiny bit)
- Toasted Sesame Seeds
Cooking Instructions
Step 1
Thoroughly wash the fresh scallions under running water. Trim them to about 5-7 cm (2-3 inches) lengths, making them easy to eat.
Step 2
Bring a pot of water to a boil. Once boiling, add a pinch of salt to the water. Adding salt helps maintain the vibrant green color of the scallions. Carefully add the prepared scallions and blanch for about 30 seconds to 1 minute. Be careful not to overcook them, as they will become mushy.
Step 3
Immediately rinse the blanched scallions under cold running water to stop the cooking process and cool them down. Gently squeeze out any excess water until the scallions are relatively dry. Place them in a mixing bowl.
Step 4
Utilize any seasoned seaweed (kim) you have at home to add a savory depth of flavor. Crumble or finely chop the seasoned seaweed. (You can adjust the amount of seaweed according to your preference.)
Step 5
To the bowl with the scallions, add the crumbled seasoned seaweed, fragrant sesame oil, and a very small amount of soy sauce to season. Sprinkle toasted sesame seeds on top.
Step 6
Now, gently toss and mix all the ingredients with your hands until well combined. Since the seasoned seaweed already contains salt, add the soy sauce very cautiously, tasting as you go. Mix gently to ensure the seasoning is evenly distributed. Your delicious Scallion Kimchi Salad is now ready!
