Main Ingredients- 2.5 Tbsp Doenjang (Soybean Paste) (Adjust to your preference)
- 10 sheets Napa Cabbage hearts
- 4 cups Anchovy Broth (or Kelp Broth)
- 1/2 stalk Green Onion
- 1 Green Chili
- 1 Red Chili
Cooking Instructions
Step 1
First, wash the napa cabbage hearts under running water and drain well. Then, cut them into roughly 3-4 cm pieces. Slice the green onion diagonally, and similarly slice the green and red chilies diagonally after removing the seeds for a splash of color.
Step 2
Pour 4 cups of anchovy broth into a pot and bring it to a boil. Once the broth is boiling, add 2.5 tablespoons of doenjang and stir well to dissolve. The amount of doenjang can be adjusted based on your household’s preference, as different types of soybean paste have varying saltiness and flavors. For a smoother soup, you can strain the doenjang through a sieve before adding it.
Step 3
When the broth with doenjang starts to boil again, add all the chopped napa cabbage. Cook until the cabbage becomes tender and softened, which usually takes about 5-7 minutes. You can adjust the cooking time based on how soft you like your cabbage.
Step 4
Once the cabbage is sufficiently cooked, add 1 tablespoon of gochugaru and 1 teaspoon of minced garlic. Also, add the colorful green and red chilies. Let it simmer for another 1-2 minutes to allow the flavors to meld together.
Step 5
