Cooking Instructions
Step 1
First, prepare the imitation crab sticks by shredding or cutting them into bite-sized pieces. Slice the medium onion into strips that are not too thin, as this will add a pleasant texture to the stir-fry.

Gently rinse the enoki mushrooms under running water. Trim off the base or separate the clustered stems. You can typically cut the bunch in half or into thirds for easier handling in the pan.

In a bowl, crack the 3 fresh eggs. Remove the chalazae (the white, stringy bits) and whisk the eggs gently with a fork or whisk until just combined. Over-whisking can make the eggs tough, so aim for a smooth, unseparated yolk and white mixture.
