Recently, there was a lot of buzz online about supporting potato farmers, but the servers were so overloaded I couldn’t even access the website! Even so, the news sparked an idea, and I naturally picked up some potatoes while grocery shopping. I decided to make ‘Gamja Haem Jorim’ (Braised Potatoes with Ham) because my kids tend to find plain potato stew a bit uninspiring. Adding ham makes it more exciting and nutritious! The aroma of the simmering sauce is incredibly enticing, and my kids kept peeking into the kitchen, curious about what delicious dish was being prepared. Served with rice, it was a meal they truly enjoyed after a long time! This simple side dish is perfect for busy households.

Main Ingredients

  • 3 Potatoes (approx. 250g)
  • 1/2 Onion
  • 1 clove Garlic
  • 130g Ham
  • 2 Tbsp Cooking Oil

Braising Sauce

  • 4 Tbsp Soy Sauce
  • 2 Tbsp Mirin (Rice Wine)
  • 2 Tbsp Oligosaccharide (or Corn Syrup)
  • 1 Tbsp Sugar
  • Pinch of Black Pepper
  • 1/3 cup Water

Cooking Instructions

Canned ham can be quite salty, so using regular processed ham is generally better for this dish. Prepare your preferred type of ham.

Cut the potatoes into half-moon shapes, about 1-inch thick, to ensure a pleasant texture. Dice the ham and onion into similar-sized cubes. Thinly slice the garlic. Soak the cut potatoes in cold water for about 10 minutes to remove excess starch; this helps prevent them from becoming mushy.

In a bowl, combine 4 Tbsp soy sauce, 2 Tbsp mirin, 2 Tbsp oligosaccharide, 1 Tbsp sugar, a pinch of black pepper, and 1/3 cup water. Whisk everything together until well combined to create the flavorful braising sauce.

Heat 2 Tbsp of cooking oil in a pan over medium-high heat. Add the drained potatoes and stir-fry until they are lightly golden and coated with oil. Then, add the diced onion and sliced garlic, and sauté for another minute until fragrant. Pour in the prepared braising sauce, stir well to coat the ingredients, and bring to a simmer. Reduce the heat to medium and let it braise until the potatoes are tender, about 10-15 minutes, stirring occasionally.

Once the potatoes have absorbed some of the sauce and are almost cooked through, add the diced ham to the pan. Continue to braise for another 2-3 minutes, allowing the ham to heat through and mingle with the sauce.
