Savory and Sweet Braised Potatoes (Gamja Jorim)
Quick and Easy Gamja Jorim Recipe for a Delicious Side Dish
Whip up a batch of perfectly savory and sweet braised potatoes (Gamja Jorim) that will have everyone asking for seconds. It’s a fantastic side dish that pairs wonderfully with rice!
Main Ingredients- 4 medium potatoes
- 1/2 carrot
- 2 Korean green chilies (Cheongyang peppers)
- 6 cloves garlic
- 1 onion
Seasoning Ingredients- 5 ladles soy sauce (Gukja)
- 1 ladle sugar (Gukja)
- 2 ladles corn syrup or rice syrup (Gukja)
- A pinch of black pepper
- 5 ladles water (Gukja)
- 2 Tbsp toasted sesame seeds
- 3 Tbsp sesame oil
- 5 ladles soy sauce (Gukja)
- 1 ladle sugar (Gukja)
- 2 ladles corn syrup or rice syrup (Gukja)
- A pinch of black pepper
- 5 ladles water (Gukja)
- 2 Tbsp toasted sesame seeds
- 3 Tbsp sesame oil
Cooking Instructions
Step 1
Begin by preparing the vegetables. Peel the potatoes and cut them into bite-sized cubes, slightly smaller than 2cm, similar to ‘kkakdugi’ (cubed radish kimchi). Cut the carrot into similar-sized pieces. Slice the onion thinly into strips. Thinly slice the Korean green chilies on an angle and thinly slice the garlic cloves. Bring a pot of water to a boil with a pinch of salt. Add the cubed potatoes and carrots and blanch for about 3-5 minutes. This step helps the potatoes maintain their shape and absorb flavors better.
Step 2
After blanching, drain the water from the potatoes and carrots. In the same pot, add 1 tablespoon of cooking oil and lightly sauté the blanched potatoes and carrots. Then, pour in 5 ladles of soy sauce, 1 ladle of sugar, 2 ladles of corn syrup, and 5 ladles of water. Bring this mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, add the sliced garlic, onions, and green chilies. Let it simmer gently, allowing the sauce to reduce and thicken, coating the vegetables. Stir occasionally and gently to prevent the potatoes from breaking apart.
Step 3
Check if the potatoes are tender and have absorbed the flavors well. Once cooked through and the sauce has thickened to your liking, add a pinch of black pepper. Turn off the heat and stir in 3 tablespoons of sesame oil. Finally, sprinkle 2 tablespoons of toasted sesame seeds over the top. Your delicious Gamja Jorim is now ready to be served!
