How to Make Delicious Soy Sauce Pickled Chilies with a Golden Ratio Brine

Main Ingredients- 60 fresh chilies (Cheongyang peppers or other spicy peppers of your choice)
Sweet & Spicy Soy Sauce Brine- 3 cups vinegar (approx. 600ml)
- 3 cups water (approx. 600ml)
- 3 cups soy sauce (approx. 600ml)
- 3 cups sugar (approx. 600ml)

Cooking Instructions
Step 1
First, wash the chilies thoroughly under running water. While washing, trim off the long stems with a knife or scissors for a neater appearance and easier eating.

To ensure the brine penetrates well, use a fork or toothpick to prick 2-3 small holes on each side of every chili. Be careful not to pierce too deeply.

It’s crucial to completely remove the moisture from the washed chilies. Use paper towels to meticulously pat dry the surface of each chili. Any remaining water can cause spoilage during storage.
