Savory and Spicy Shrimp Stew
Easy Shrimp Stew Recipe – Absolutely Delicious!
Frozen or fresh shrimp, either works! Enjoy this refreshing and spicy shrimp stew, packed with the delightful umami flavor of shrimp. Shrimp preparation is easy with just a pair of kitchen scissors.
Main Ingredients- Shrimp 500g (frozen or fresh)
- Broth (anchovy-kelp or dried pollack, etc.) 1.3-1.5L
- Onion (medium) 1/2
- Zucchini 1/4
- Green onions 2 stalks
Seasoning- Homemade Doenjang (soybean paste) 1 heaping Tbsp
- Gochujang (red chili paste) 1 Tbsp
- Gochugaru (red chili flakes) 2 Tbsp
- Guk-ganjang (soup soy sauce) 1 Tbsp
- Anchovy sauce 1 Tbsp
- Minced garlic 1 Tbsp
- Minced ginger 1/2 Tbsp (or ginger juice 1 tsp)
- Homemade Doenjang (soybean paste) 1 heaping Tbsp
- Gochujang (red chili paste) 1 Tbsp
- Gochugaru (red chili flakes) 2 Tbsp
- Guk-ganjang (soup soy sauce) 1 Tbsp
- Anchovy sauce 1 Tbsp
- Minced garlic 1 Tbsp
- Minced ginger 1/2 Tbsp (or ginger juice 1 tsp)
Cooking Instructions
Step 1
First, prepare the broth that will give your shrimp stew a deep flavor. I like a generous amount of broth, so I’ve prepared 1.5 liters. Any refreshing broth, such as anchovy-kelp broth or dried pollack broth, will work wonderfully.
Step 2
Once the broth starts to boil, add a heaping tablespoon of your homemade Doenjang and stir until it’s well dissolved into the broth. This will form the savory base of your stew.
Step 3
Next, add 1 tablespoon of Gochujang and stir to combine. The Doenjang and Gochujang together create a spicy yet savory foundation for the stew.
Step 4
Add 2 tablespoons of Gochugaru for a pleasant kick of spice. If you enjoy more heat, feel free to add a little extra.
Step 5
Stir in 1 tablespoon of minced garlic to enhance the overall aroma and flavor.
Step 6
Finally, add 1/2 tablespoon of minced ginger or 1 teaspoon of ginger juice for a refreshing aroma. Ginger helps to eliminate any potential fishiness from the shrimp and adds a clean finish to the broth.
Step 7
To add a touch of umami, stir in 1 tablespoon of Guk-ganjang to season the stew.
Step 8
Enhance the seafood flavor even further by adding 1 tablespoon of anchovy sauce. Using both soy sauce and anchovy sauce will double the savory depth of your stew.
Step 9
Now it’s time to prepare the shrimp. Use kitchen scissors to trim off the sharp antennae and legs. A small snip at the front of the head also makes for cleaner eating. You can easily remove the long digestive tract by using a toothpick. Insert the toothpick into the back segment near the tail and gently pull it out; the vein should come with it.
Step 10
Rinse the prepared shrimp thoroughly under cold running water. This step removes any impurities, ensuring a cleaner and more refined taste in your stew.
Step 11
Once the prepared broth is at a rolling boil, add the prepared shrimp, chopped onion, and zucchini. Adding vegetables may slightly lower the broth’s temperature, so wait until it returns to a boil.
Step 12
After boiling for about 5 minutes with the shrimp and vegetables, add the chopped green onions and cook for another 1-2 minutes. Your delicious shrimp stew is now ready! Turn off the heat and serve immediately.
