Main Ingredients
- Mentaiko: 1-2 strands (adjust to your preference)
- Instant noodles: 1 pack (your favorite type)
- Garlic cloves: 3
- Green onion: a moderate amount (chopped)
- Olive oil: 2 tablespoons
- Butter: 1 tablespoon
- Noodle cooking water: about 1/2 cup (using a soju cup)
- Soy sauce: 1 teaspoon
Cooking Instructions
Step 1
First, carefully scrape the roe out of the mentaiko using the back of a knife and set it aside. Thinly slice the garlic cloves and finely chop the green onions to add a fragrant touch.

Heat a wide pan over medium heat and add a generous amount of olive oil. Add the sliced garlic and chopped green onions, and sauté until fragrant without burning. It’s best when the garlic starts to turn golden brown.

Once the aroma of garlic and green onions is released, start cooking the ramen noodles on another burner. Cook the noodles for about 30 seconds to 1 minute less than the time indicated on the package, so they are slightly al dente. This way, the noodles won’t get mushy while stir-frying and will maintain their texture.

To the pan with the sautéed garlic and green onions, add the drained noodles, the prepared mentaiko roe, and 1 tablespoon of butter. Pour in about half a soju cup of the noodle cooking water; this helps the sauce coat the noodles and makes the dish moist. Add 1 teaspoon of soy sauce for umami, and quickly stir-fry everything together until well combined. When the mentaiko turns reddish as it cooks, it’s done!
