Main Ingredients
  • 1 handful shredded daikon radish (approx. 150-200g)
  • 1 stalk green onion (approx. 15cm length)
  • 500ml water

Seasoning & Others
  • 1/2 Tbsp soy sauce or salt (adjust to taste)
  • 1 Tbsp sesame oil
  • 3 Tbsp perilla seeds
  • 1/2 Tbsp minced garlic
  • 1 Tbsp fish sauce or soy sauce (for added umami)

Cooking Instructions

Step 1

Begin by placing about a handful (approximately 150-200g, roughly one paper cup’s worth) of thinly shredded daikon radish into a pot. Shredding the radish thinly will help it cook evenly and release its flavor into the broth.

Step 2

To the shredded radish, add 1/2 tablespoon of soy sauce (or salt) and 1 tablespoon of sesame oil. Sauté the radish over medium heat until it begins to soften and become slightly translucent. This step enhances the radish’s natural sweetness and deepens the soup’s flavor.

Step 3

Once the radish turns translucent and tender, pour in 500ml of water. Bring the soup to a rolling boil over high heat.

Step 4

While the soup is boiling, thinly slice the 15cm green onion diagonally. (You can adjust the amount of green onion to your preference; using both the white and green parts adds a nice aroma.)

Step 5

As the soup starts to boil, reduce the heat to medium-low. Add all the prepared seasoning ingredients: 3 tablespoons of perilla seeds, 1/2 tablespoon of minced garlic, 1 tablespoon of fish sauce (or soy sauce) for extra depth of flavor, and the sliced green onion.

Step 6

Stir everything together gently and let the soup simmer for another 2 to 3 minutes. Taste the broth and adjust the seasoning. If it’s too salty, add a little more water; if it’s too bland, add a pinch more salt or soy sauce. (Tip: A small amount of saeujeot or other fermented seafood sauce can also add a wonderful depth of flavor.)

Step 7

Finally, ladle the hot and delicious Perilla Seed and Radish Soup into bowls. Serve immediately with freshly cooked rice for a comforting Korean meal!
