Ingredients

  • 1 pack of fish cakes (eomuk) (skewered or regular)
  • 5 cm piece of Korean radish (mu)
  • 1 handful of green onions (daepa)
  • A pinch of Korean chili pepper (cheongyang-gochu) (optional, to taste)
  • 1/3 Tbsp minced garlic
  • 1 Tbsp soup soy sauce (guk-ganjang)
  • Pinch of salt
  • Pinch of black pepper
  • 3 dried anchovies (for broth)
  • 3 pieces of dried kelp (dashima) (for broth)
  • 600ml water

Cooking Instructions

Step 1

Start by pouring 600ml of water into a pot. Add the Korean radish, cut into 4 pieces, along with 3 dried anchovies and 3 pieces of dried kelp. Bring the water to a boil. Once boiling, remove the kelp immediately to prevent a bitter taste. Let the anchovies and radish continue to simmer in the pot to create a flavorful broth.

After the broth has steeped and developed flavor, remove the anchovies. Add 1 tablespoon of soup soy sauce to the clear broth base to enhance its savory depth.

For a clean and refreshing taste, add 1/3 tablespoon of minced garlic. The garlic will add a wonderful aroma and depth to the soup.

Now it’s time to add the star ingredient: the fish cakes. If you’re using pre-skewered fish cakes, add them directly to the pot. If you have regular fish cakes, cut them into bite-sized pieces before adding. The fish cakes will absorb the delicious broth.

If you enjoy a bit of heat, add half a Korean chili pepper, finely chopped. You can adjust the amount to your preference. For a more colorful presentation, consider adding some red chili pepper as well – it makes the Eomuk Tang look even more appealing!
