Perfect for when you don’t have much appetite! This dried mustard greens soup is simmered with plenty of doenjang (fermented soybean paste), known for boosting immunity. Main Ingredients

  • Boiled dried mustard greens 150g
  • 1 King oyster mushroom
  • 1 Anchovy-kelp broth pack
  • 1/2 Korean leek
  • 1 Korean green chili pepper
  • 1.5 Tbsp Doenjang (fermented soybean paste)
  • 0.5 Tbsp Gochujang (red chili paste)
  • 0.5 Tbsp Dried shrimp powder
  • 0.5 Tbsp Minced garlic
  • Pinch of salt

Cooking Instructions

Step 1

Prepare all ingredients. It’s convenient to have the dried mustard greens boiled and ready in advance.

In a pot, add water and the anchovy-kelp broth pack. Simmer for about 10 minutes to create a rich broth. Remove the broth pack. In a separate bowl, sift the doenjang to ensure it’s smooth, then dissolve it in the pot. Add half a tablespoon of gochujang for an added depth of flavor.

Once the broth begins to boil, add the dissolved doenjang and gochujang mixture and continue to simmer for about 5 minutes. While this simmers, cut the pre-boiled and frozen dried mustard greens into bite-sized pieces and add them to the pot. Cook for another 5 minutes, allowing the greens to infuse their flavor into the soup.

Add the minced garlic (0.5 Tbsp) and dried shrimp powder (0.5 Tbsp) and stir well. Taste the soup and adjust the seasoning with a pinch of salt if needed, as doenjang already has its own saltiness. Keeping the soup mild ensures it’s palatable for children.

Trim the base of the king oyster mushroom, then separate it into strands. Add the mushroom to the pot. King oyster mushrooms cook quickly, so add them towards the end for a brief simmer.

Finally, add the chopped Korean leek and diagonally sliced green chili pepper, and simmer briefly to finish. Adjust the amount of chili pepper if you prefer a spicier kick. Your delicious and refreshing dried mustard greens doenjang soup is ready!
