Ingredients

  • Tofu noodles: 100g
  • Pork jowl meat (Hangjeongsal): 100g, cut into bite-sized pieces
  • Carrot: a small amount, thinly sliced
  • Mushrooms (e.g., shiitake, king oyster): a small amount, sliced
  • Purple chili pepper: 1, deseeded and thinly sliced
  • Garlic: 2 cloves, thinly sliced

Seasoning

  • Chili oil: 2 Tbsp
  • Hoisin sauce: 1 Tbsp
  • Minced ginger: 1 tsp

Cooking Instructions

Step 1

Prepare all your ingredients by washing them thoroughly. Cut the pork jowl meat into bite-sized pieces and slice the vegetables accordingly. Open the packaging for the tofu noodles.

Thinly julienne the carrot. Slicing it thinly ensures it cooks evenly and has a pleasant texture when stir-fried with other ingredients.

Bring a pot of water to a rolling boil. Once boiling, add the julienned carrots, prepared mushrooms, and the tofu noodles to the pot.

Blanch the tofu noodles and vegetables for about 1 minute, then immediately drain them using a colander. Be careful not to overcook, as the tofu noodles can become mushy.

Prepare the purple chili pepper by removing the seeds and slicing it thinly. Slice the garlic into thin pieces. Finely mince the fresh ginger. Feel free to adjust the amount of ginger to your preference.

Heat 2 tablespoons of chili oil in a pan over medium-high heat. Add the minced ginger and sauté until fragrant. Then, add the sliced pork jowl meat and stir-fry until it’s nicely browned and cooked through. As the pork cooks, it will render some fat, adding a rich flavor.

Once the pork is cooked, add the prepared carrots, mushrooms, purple chili pepper, and garlic to the pan. Stir-fry everything together until the vegetables are tender-crisp. Keep stir-frying over medium heat.

When the pork and vegetables are well stir-fried, add the blanched tofu noodles. Pour in 1 tablespoon of hoisin sauce and toss everything gently to coat evenly. Stir-fry for another minute. Taste the dish and, if needed, add a tiny bit of soy sauce or salt to adjust the seasoning.
