Main Ingredients

  • 1.3 cups Rice (approx. 260g)
  • 4 sheets Tofu skin (Aburaage, square type)
  • 1 piece Chicken breast (approx. 150g)
  • 2 Dried shiitake mushrooms
  • 1/4 Carrot (small)
  • 2 pieces Kombu (5x5cm size)
  • 1.5 cups Water (approx. 300ml)

Chicken Marinade Ingredients

  • 1 pinch Salt
  • 1 Tbsp Cooking sake (15ml)
  • A little Black pepper

Rice Seasoning Ingredients

  • 3 Tbsp Soy sauce (45ml)
  • 3 Tbsp Cooking sake (45ml)
  • A little Salt (adjust to taste)
  • 2 Tbsp Sesame oil (30ml)

Cooking Instructions

Step 1

First, gently rinse the rice under running water two to three times to remove dust. Transfer the rice to a bowl, add 1.5 cups of water, and let it soak for about 30 minutes. Soaking the rice allows it to cook evenly, resulting in a softer texture.

Drain the soaked rice thoroughly in a sieve. Ensuring the correct moisture level is crucial for cooking the rice, so it’s important to drain it well.

In 1.5 cups (300ml) of lukewarm water, add the 2 pieces of kombu and 2 dried shiitake mushrooms. Let them steep for about 10 minutes to allow their flavors and aromas to fully infuse. This broth will add a deep umami to your rice.

Cut the chicken breast into bite-sized pieces. Add 1 pinch of salt, 1 Tbsp of cooking sake, and a little black pepper to the cut chicken breast. Gently knead and mix to marinate. Using cooking sake effectively helps to remove any gamey odor from the chicken.

Lightly blanch the square tofu skin in boiling water, or pour hot water over it to remove excess oil. Squeeze out the water firmly and cut it into long strips, similar in size to the chicken breast pieces.

Peel the carrot and slice it thinly into julienne strips. Squeeze out the water from the rehydrated shiitake mushrooms and slice them into bite-sized pieces, similar to the chicken. Matching the size of the vegetables will make them easier to eat with the rice.

Let’s prepare the seasoning for the rice. In a bowl, combine 3 Tbsp soy sauce, 3 Tbsp cooking sake, a little salt (adjust to your preference), and 2 Tbsp sesame oil. Stir well until all ingredients are evenly mixed.

In a pressure cooker (or rice cooker), spread the drained, soaked rice evenly. Arrange the prepared tofu skin, carrots, and shiitake mushrooms nicely on top of the rice.

Add the prepared seasoning (3 Tbsp from Step 6) to the kombu broth and mix well. This broth will become the moist liquid used for cooking the rice.

Carefully pour the mixed broth into the pressure cooker (or rice cooker). Include the kombu pieces used for steeping the broth. Now, the rice is ready to be cooked. If using a pressure cooker, bring it to a high heat, and once the weight starts to whistle, reduce the heat to low and cook for about 5 more minutes. After that, turn off the heat completely and let it steam for 10-15 minutes. If using a regular rice cooker, use the standard ‘cook’ setting.
