Here’s a recipe for a healthy and delicious stir-fried bellflower root (doraji) namul. This dish emphasizes preserving the natural white color of the doraji. We’ll enhance its savory flavor with tuna extract and use salt for seasoning instead of soy sauce, creating a clean taste. Because it doesn’t contain garlic, it’s perfect for ancestral rites (charye) or memorial services. It’s a wholesome side dish that everyone can enjoy.
Main Ingredients- 200g peeled bellflower root (doraji)
- Pinch of coarse sea salt (for removing bitterness)
Seasoning Ingredients- 1 Tbsp tuna extract
- Pinch of salt (to taste)
- 2 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds
- 1/2 cup anchovy broth (approx. 100ml)

Cooking Instructions
Step 1
Slice the thick stems of the peeled bellflower root in half lengthwise, then cut them into bite-sized pieces. This ensures the seasoning is evenly distributed and makes them easier to eat.

In a large bowl, combine the sliced bellflower root with a pinch of coarse sea salt (about 1/2 tsp). Gently rub the root with your hands. This process effectively removes the natural bitterness of the doraji.

Rinse the treated bellflower root thoroughly under cold running water two to three times. After rinsing, drain the water well using a sieve.

Heat a pan over medium heat and add 2 tablespoons of sesame oil…
