Here’s a super simple recipe for a refreshing chive salad using just one bunch of fresh chives. Its vibrant flavor and crisp texture make it a perfect side dish for any meal, or a delightful accompaniment to grilled meats. The fresh, clean taste, reminiscent of early spring greens, will awaken your appetite.

Main Ingredients

  • 1 bunch fresh chives (approx. 100-150g)

Seasoning Ingredients

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Fish Sauce (Tuna extract) (can substitute with anchovy sauce or soy sauce)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil (adds a wonderful fresh aroma)
  • 1 tsp Toasted Sesame Seeds (for nutty flavor)

Cooking Instructions

Step 1

First, trim any wilted or unsightly leaves from the chives. Wash them thoroughly under running water. Once the excess water has drained well, cut the chives into manageable lengths of about 5cm (2 inches). Cutting them too long can make it difficult for the seasoning to penetrate evenly and also harder to eat.

Place the prepared chives into a large mixing bowl. This bowl will be used to combine all the seasoning ingredients.

Now, let’s prepare the delicious seasoning. Evenly sprinkle the ingredients over the chives. Start with 1 Tbsp of fish sauce and 1 Tbsp of soy sauce. Add 1 Tbsp of gochugaru for a pleasant spiciness. Then, for a rich, nutty aroma, add 1 Tbsp of sesame oil, and finally, sprinkle 1 tsp of toasted sesame seeds. (If you prefer a touch of sweetness, you can add a little sugar.)

Gently toss the chives with your hands to ensure the seasoning is evenly distributed. Be careful not to overmix or mash the chives, as you want to maintain their crispness. Mix until all the ingredients are well combined, and your fresh and flavorful chive salad is ready! Serve immediately and enjoy this delightful dish.
