【Easy Side Dish】 Super Simple & Delicious Gam-Doenjang (Thick Soybean Paste Stew) Recipe
Have you ever mixed hot rice with savory Gam-Doenjang? Prepare for a powerful rice thief! This rich and flavorful stew is perfect for a hearty meal and will surely satisfy your cravings.
Main Ingredients- 400g ground beef
- 1 onion, finely diced
- 1 zucchini, finely diced
- 5 shiitake mushrooms, finely diced
- 1 potato, finely diced
Seasoning Ingredients- 4 Tbsp Doenjang (fermented soybean paste) (approx. 60g)
- 2 Tbsp Miso paste (approx. 30g)
- 1 Tbsp Gochujang (red chili paste) (approx. 15g)
- 1 Tbsp Gochugaru (red chili flakes) (approx. 7g)
- 1 Tbsp sugar (approx. 10g)
- A dash of sesame oil (for finishing)

Cooking Instructions
Step 1
First, gently press the ground beef with paper towels to remove any excess blood. This step helps to eliminate any gamey odor and ensures a cleaner flavor.
Step 2
Wash and finely dice the zucchini, onion, and potato into approximately 0.5cm cubes. If you prefer a bit more texture, you can dice them slightly larger. Place the diced vegetables and the drained ground beef in a pan. Drizzle in a little sesame oil and stir-fry over medium heat.
Step 3
You only need a small amount of sesame oil for added aroma; the moisture from the vegetables will prevent the ingredients from sticking and ensure they cook evenly. By the way, you could mix rice into this mixture and stir-fry it for a delicious fried rice!
Step 4
Once the vegetables and beef are cooked and tender, add the finely diced shiitake mushrooms and stir-fry for another minute. Mushrooms add a wonderful aroma and texture, so don’t skip them!

When all the ingredients are well-cooked and combined, turn off the heat and let it cool slightly. Now it’s time to prepare the seasoning ingredients for your delicious Gam-Doenjang.

Keeping the cooked ingredients in the pan, add the Doenjang, Miso paste, Gochujang, Gochugaru, and sugar. Stir well and cook over low heat, stirring constantly to prevent clumping. This allows the seasonings to evenly coat the ingredients, deepening the flavor.
Step 7
Transfer the finished Gam-Doenjang to a ttukbaegi (earthenware pot) or a heatproof glass container. Let it cool slightly, then seal and store it in the refrigerator. This way, you can enjoy its deliciousness for days to come.

Serve a generous spoonful over a bowl of hot rice for a fantastic Gam-Doenjang rice bowl that requires no other side dishes. It’s also wonderful as a dipping sauce for fresh lettuce wraps!
