A Flavorful Side Dish: Salty Stir-Fried Gondre with Soybean Paste
Let’s make a flavorful stir-fried gondre with semi-dried gondre leaves. It’s a delicious and unique side dish with a delightful salty taste.
Ingredients
- 250g semi-dried gondre leaves
- 1 Tbsp soybean paste (doenjang)
- 1 Tbsp minced garlic
- 1/2 Tbsp perilla oil
- 1/3 cup chopped green onion
- 1/2 Tbsp dried anchovy powder
- 1/3 cup water
- 2 Korean green chili peppers
- 1/2 Tbsp red pepper flakes
Cooking Instructions
Step 1
First, prepare the semi-dried gondre leaves. Rinse them thoroughly several times under running water. Then, cut them into bite-sized pieces (about 3-4 cm) and lightly drain any excess water. Removing any tough stems will make the gondre more tender.
Step 2
In a bowl, combine the prepared gondre leaves with 1 Tbsp soybean paste, 1/2 Tbsp perilla oil, and 1 Tbsp minced garlic. Gently mix everything together with your hands, ensuring the seasoning is evenly distributed. Marinating the leaves like this beforehand adds a wonderful depth of flavor.
Step 3
Heat a pan over medium-low heat and add a little perilla oil. Sauté the chopped green onions until fragrant, creating a delicious green onion oil. While fresh green onions are best, frozen ones work too. Cook until the green onions become translucent and softened.
Step 4
Once the fragrant green onion oil is ready, add the marinated gondre leaves to the pan and stir-fry them with the green onions. Add 1/2 Tbsp dried anchovy powder and 1/3 cup of water. Continue to stir-fry until the gondre leaves are well combined with the seasoning. For an even richer flavor, you can substitute the water with anchovy broth!
Step 5
As the mixture cooks, the liquid will start to reduce. When it’s almost dry, add the 2 chopped Korean green chili peppers and 1/2 Tbsp red pepper flakes. Stir everything together quickly to incorporate the spicy kick.
Step 6
Once all the ingredients are well combined and the liquid has mostly evaporated, turn off the heat and finish the dish. This delicious stir-fried gondre with soybean paste is perfect served over a bowl of warm rice for a satisfying meal. Enjoy this delightful and unique side dish!
