I made a potato stir-fry with spam added! I often make it this way when stir-frying potatoes. It’s salty and savory, truly a rice thief! ^^

Ingredients

  • 3 medium potatoes
  • 1/2 can of Spam or luncheon meat
  • 1/4 onion
  • 1 red chili pepper (optional)
  • A little bit of green onion
  • Cooking oil

Seasoning

  • Salt (to taste)
  • Pepper (to taste)

Cooking Instructions

Step 1

First, peel the potatoes and slice them into uniform thickness using a mandoline slicer or by hand into thin matchsticks. Aim for about 0.3-0.5 cm thickness to prevent them from breaking apart during cooking.

Remove the seeds from the red chili pepper and julienne it to match the thickness of the potatoes. If you like a bit of spice, use it; otherwise, you can omit it, especially if children will be eating it.

Chop a small amount of green onion into pieces about 2-3 cm long, focusing on the white parts for fragrance.

Peel the onion and julienne it to a similar thickness as the potatoes. The natural sweetness of the onion will add depth to the stir-fry.

Slice the Spam into long, bite-sized pieces, similar in length to the potato matchsticks. Trying to cut them uniformly will make the dish look more appealing when cooked.

Fill a pot with enough water and bring it to a rolling boil over high heat. Boiling the potatoes briefly helps them cook through without becoming mushy.

Once the water is boiling vigorously, add the julienned potatoes and blanch them for about 30 seconds to 1 minute. This step is crucial for achieving a tender interior and preventing the potatoes from falling apart.

Drain the blanched potatoes immediately using a colander and rinse them lightly under cold water to cool them down and remove excess starch. Ensure they are well-drained; excess water can cause splattering when frying and dilute the flavor.

Heat a wide frying pan over medium heat, then add about 2-3 tablespoons of cooking oil, swirling to coat the pan. Plenty of oil is important to prevent the potatoes from sticking and to ensure even cooking.

Add the sliced Spam to the hot pan first. Fry it over medium-low heat until it’s golden brown and slightly crispy. The rendered fat from the Spam will add flavor to the stir-fry.

Once the Spam is nicely browned, add the thoroughly drained potatoes to the pan. Stir-fry over medium heat for about 3-4 minutes, until the potatoes start to look translucent and are partially cooked. Then, add the julienned onion and continue to stir-fry for another 1-2 minutes until the onion softens and becomes slightly translucent.

While stir-frying, taste the potatoes to check for doneness and season with salt and pepper to your preference. Remember that Spam is already salty, so adjust the salt accordingly. Finally, add the julienned red chili pepper and green onion, and stir-fry over high heat for about 1 minute until fragrant. Your delicious and savory Spam and Potato Stir-fry is complete! For an extra touch, you can sprinkle some sesame oil or toasted sesame seeds on top.
