Instead of the usual pan-fried tuna patties with egg batter, try making this special ‘Tuna Okonomiyaki’ using leftover cabbage from your fridge! The rich flavor of tuna combined with the crisp and sweet cabbage creates a delightful dish that both children and adults will love. Main Ingredients

  • 1 can (100g) Tuna (including oil)
  • 1 handful Cabbage (thinly shredded)
  • A little Carrot (thinly shredded)

Batter and Seasoning

  • 3 Tbsp Tempura flour
  • Pinch of Black pepper
  • 1 Tbsp Sesame oil

Cooking Instructions

First, thoroughly wash the cabbage and carrot under running water, then shred them as thinly as possible. If shredding is too much work, you can use a food processor.

In a bowl, combine the shredded cabbage and carrot, and the drained canned tuna (adding a bit of the tuna oil will enhance the flavor, allowing you to skip additional seasoning). Add 3 tablespoons of tempura flour, a pinch of black pepper, and 1 tablespoon of sesame oil.

Put on disposable gloves and gently mix and knead the ingredients until well combined to form the batter. Be careful not to overwork the mixture; aim to evenly distribute all the ingredients.

Heat a frying pan over medium heat, add a little oil, and place the batter into the pan, shaping it into a round, flat okonomiyaki form. Use a spatula or turner to make it look appealing. Avoid making the batter too thick, as it might be difficult to cook the inside thoroughly.

Once one side is golden brown and cooked, flip it over and cook the other side until equally golden brown. The tuna oil will naturally render, so you don’t need to add much extra oil to the pan.
