Discover a nutritious and flavorful stir-fry featuring white wood ear mushrooms (also known as silver ear mushrooms), rich in Vitamin D to aid calcium absorption. Main Ingredients

  • 1 dried white wood ear mushroom
  • 50g chives
  • 1/2 carrot
  • 200g thinly sliced pork (for stir-fry/Japchae)
  • 100g store-bought Korean BBQ pork marinade (or Bulgogi marinade)

Seasoning & Others

  • 1 Tbsp minced garlic
  • 1 Tbsp cooking oil
  • 1/2 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

Prepare 1 dried white wood ear mushroom. Soak it in lukewarm water for about 30 minutes to 1 hour until fully rehydrated. The mushroom will soften and significantly increase in size.

Prepare 200g of thinly sliced pork, suitable for stir-fries or Japchae. (I used pork loin.) Marinate the pork with 100g of store-bought Korean BBQ pork marinade, letting it sit for at least 30 minutes. Marinating overnight will yield even richer flavors. You can also use store-bought Bulgogi marinade.

Peel the carrot and julienne it thinly. Wash about 50g of chives and cut them into lengths similar to the julienned carrots.

Drain the rehydrated white wood ear mushrooms. Trim off the tough, woody base of each mushroom. Then, tear the mushroom into bite-sized pieces. Tearing creates a more natural and pleasing texture.

Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the marinated pork and stir-fry, breaking up any clumps. Add 1/2 Tbsp of minced garlic and continue to cook until the pork is about halfway done.

When the pork is about 70% cooked, add the prepared white wood ear mushrooms and julienned carrots to the pan. Stir well to combine with the pork and continue stir-frying.

Continue to stir-fry for another 2-3 minutes until the vegetables are tender-crisp. Finally, add the cut chives and stir-fry quickly over high heat for about 1 minute. Chives cook very quickly, so avoid overcooking to maintain their crispness. Taste the stir-fry and add salt or soy sauce if needed. (The pork marinade was quite flavorful, so I didn’t need to add extra seasoning.)

Once everything is cooked, turn off the heat. Drizzle with 1/2 Tbsp of sesame oil and sprinkle with toasted sesame seeds. The residual heat will gently meld the flavors and aromas.
