Savory and Chewy Stir-Fried Oyster Mushrooms (Nutari Mushroom Muchim)
Simple and Quick Oyster Mushroom Salad
This is a simple side dish of seasoned oyster mushrooms. It’s a quick and easy way to add a healthy and delicious element to your meal.
Main Ingredients- 100g Oyster mushrooms (Nutari mushrooms)
Seasoning- 1 tsp Salt
- 1/2 Tbsp Toasted sesame seeds (ground)
- 2 drizzles Perilla oil (approx. 1 Tbsp)
- 1/3 Tbsp Coarse salt (for blanching)
- 1 tsp Salt

Cooking Instructions
Step 1
First, prepare 100g of oyster mushrooms. Trim off the tough base of the mushrooms. Then, tear the mushrooms by hand into bite-sized pieces, about 3-4 cm long. Tearing them by hand helps the seasoning penetrate better and improves the texture.
Step 2
Bring a pot of water to a rolling boil. Once boiling, add 1/3 Tbsp of coarse salt. Carefully add the prepared oyster mushrooms and blanch them for just 30 seconds to 1 minute. Be careful not to overcook them, as this will make them lose their chewy texture.
Step 3
Immediately drain the blanched mushrooms using a colander and quickly rinse them under cold running water. This process rapidly cools the mushrooms, helping to retain their crisp and chewy texture.
Step 4
Gently press the rinsed mushrooms with your hands to squeeze out excess water. Avoid squeezing too hard, as this can mash the mushrooms. Place the drained mushrooms in a mixing bowl. Add 1 tsp of salt, 1/2 Tbsp of ground toasted sesame seeds, and 2 drizzles (about 1 Tbsp) of perilla oil. Gently mix and toss the ingredients together with your hands until the mushrooms are evenly coated with the seasoning.

Your delicious oyster mushroom salad is ready! The fragrant aroma of perilla oil combined with the nutty flavor of sesame seeds makes this an excellent side dish that will whet your appetite. It’s also delicious served over a bowl of warm rice!
